A unique expression of Silvaner, carefully aged in Barriques, modern and very dry (1.2 g/L residual sugar), a very rich high-quality white wine ideal for food pairing with fish and light/white meats.
The Silvaner Grape
This grape varietal came originally from Austria to Castell in 1659, it has become the most important grape of Franconia today. Grown on the vineyards around Castell, this grape produces fine, elegant Silvaner wines that reflect their Franken origin optimally. Spicy aromas, mineralic characteristics, as well as a mostly moderate acidity typical of the Silvaner. A grape that fits perfectly to a hot climate and spicy hearty Asian dishes.
Vinification
The grapes were harvested at perfect ripeness on 11 October 2013, at 104° Oechsle by hand. The grapes were fermented with wild yeasts in wooden casks and barriques. Storage of the 2012 vintage occurred in oak barrels until the end of May 2014.
Vintage 2013
Due to a long white winter, followed by a cool and wet spring, a late bud burst and blossom was experienced in Castell. Summer started with normal temperatures and little rain, autumn was challenging due to high rain quantities Due to a big work effort and quick decision making, Castell came up with a big range of great wines: to start with light fruity ones to the concentrated, full bodied and long lasting First Growth.
Tasting Notes
Bouquet: Discreet vanilla scents, smoky creamy notes, aromas of bitter almonds and marzipan
Palate: Creamy, salty character, minerality and malt, a mouth-filling sensation
Food Matching: At 10-12°C to crustaceans with spicy sauces, white meat and poultry with delicate vegetables
