The Silvaner Grape

The Silvaner grape is closely connected to Castell, because its history in Germany started in Castell in 1659. In that year the first Silvaner was planted on a Castell vineyard. A contract dating from this year is still on display in the princely archives.

The Castell-Castell series represents are modern wine style in a standard bottle (not a Bocksbeutel). They are fruity and dry, with a pure and fresh taste. The Castell-Castell wines are ideal for a relaxing glass of easy-drinking wine in the evening, the tasty partner to a Mediterranean meal and the easy bottle for a spontaneous get-together with friends.

Castell producer association

In addition to our winery, Castell started a producer association back in 1973. Albrecht Fürst zu Castell-Castell took this forward-looking step in order to give the local winegrowers a perspective to preserve the cultural landscape around Castell. 25 wineries manage a total of 30 hectares. We support the winegrowers as partners and market their wines under “Castell-Castell – The Winegrowing Families”.

Wet spring - dry winter and summer - wet autumn with mild temperatures - harvest over 6 weeks

Wine Making Notes

Harvest by hand and machine, fermented in steel tanks under temperature controlled. The wine has been kept in contact with its fine yeast for three months (sur lie!).

Tasting Notes

Bouquet: Apricot and mango, a hint of spice, rich in minerals, fine scent of fresh pome fruit and green apple. Pleasant acidity on the palate with a nice drinking flow ('flüssig")

Palate: Juicy, fresh fruity, full flavour

Food pairing: For light dishes, seafood, Chinese cuisine


Residual sugar: 4.3 g/L

Acidity: 5.8 g/L (sugar/acidity ratio: 0.8 = dry)

Alcohol: 12.0%


More about Silvaner

The Silvaner grape is, in fact, an Austrian cultivation which only became more widely popular after being planted in the Keuper soil and continental climate of the Steigerwald in Franken (northern Bavaria). The second region where Silvaner plays a significant role is the Alsace, today part of France but historically a German-speaking area as well.

On April 5th 1659 the Count of Castell’s bailiff, one Johann Georg Körner, ordered Michel Saueracker the messenger to bring back 25 Silvaner graftings from nearby Obereisenheim, at a cost of eight shillings and threepence halfpenny. At that time no-one dreamed that this Austrian import would mature into the ambassador per se of Franconian wine. In time the Silvaner became a typical Castell grape, with signposts pointing the way to the vines and even a monument dedicated to it. It is besides Riesling the authentic, mainly in Germany grown grape, and until the 1970ies the most grown vine in Germany.

In the ‘Domäne Castell’ Silvaner is our major variety with about 40% of all wines produced. The vine is now perfectly adapted to the heavy gipsum-loam-clay soil of the Castell vineyards. These vineyards, although situated within 2 miles around the village give very individual characters to the wines because of their differing microclimats.

Today the Silvaner attracts more and more the interest of wine writers and critics in Germany and around the world.
