Appearance: clear, very light-yellow color
Nose: very elegant, fine, and complex mixing white flowers with notes of flint, lime blossom honey and a slight lemony note. Mediterranean style, crispiness.
Palate: ample, round, nice balance between freshness, bitterness, and complexity combining notes of citrus fruits and candied fruits with grilled, finely woody and delicately aniseed notes with an elegant, mineral and iodized finish which provides a beautiful persistence.
Temperature: 10 to 12°C – as an aperitif or during a meal
Accompaniment: perfect match with grilled or cooked fish, seafood and shellfish, goat cheese...

Vinification: whole grain pressing, cold settling, 10°C for 24 hours
Fermentation: stainless steel tank, thermo-regulated temperature 18°c, only indigenous yeasts, fermentation of around 25 days, no malolactic fermentation
Analytical characteristics: 13.5% alcohol, residual sugars: 3 g/l (very dry)
Ageing: 6 months on fine lees in stainless steel vats, light fining with bentonite before filtration and bottling.
