US-journalist Tom Hyland has selected the 500 most distinctive wines of Italy. His book “Beyond Barolo and Brunello: Italy’s Most Distinctive Wines” describes Stoan as “truly one of Italy’s finest and most distinctive white wines”.

 

Grapes: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%

Soil: gravelly to rocky, limestone and loam, rich in minerals.

Age of the vines: 10 – 40 years

Climate: Extreme interplay of sunny days influenced by the Mediterranean climate and the

cool nights marked by the cold downslope winds from the surrounding mountains.

Vinification: At harvest, the grapes were delivered in small bins and immediately gently pressed. Fermentation took place slowly at controlled temperatures (18-20°C) in wood barrels (30 – 40 hl), in which partial malolactic fermentation took place. Clarification took place through natural sedimentation of particles.

Maturation: It matured separately in large wood barrels (30-40 hl), at constant contact with the lees until the end of August. After blending and bottling, the wine matured in the bottle for at least another 4 months. The total maturation period is thus at least 15 months. .

Colour: Light golden

Aroma: Elegant and refined, fruity notes of peach, apricot, pear, elderflower, kumquat, white

flowers with fine spicy notes, jasmine, mimosa.

Taste: Deep fruit aromas of pineapple, banana, pear, tomato leaves, green bell pepper, citrus zest, harmonic and balanced, delicate salty minerality with a long lasting, creamy finish.

Food pairing: Ideal accompaniment to many tasty first courses, excellent with fish dishes and seasoned white meat or also with spicy pork with mushrooms.

Residual sugar: 3.1 g/L

Total acidity: 5.5 g/L

Sugar/acidity ratio: 0.6 (very dry)
